This emulsifier has been formulated especially for layer cakes. Emulgel softex 310 has a good aeration property and it gives a desired softness to the final product.
Ingredients : Mono glyceride(E471), Propylene glycol ester(E477), Sodium stearoyl lactylate(E481), Poly glycerol ester(E475), Propylene glycol, Sorbitol and Water.
Effects of Emulgel Softex 310 : 1. Controlling the moisture of product and increasing the shelf life 2. Creation the fine texture in the product 3. Increasing the effect of egg and oil and possibility to decrease these ingredients in dough recipe 4. Decreasing the density of dough 5. Decreasing the mixing time 6. Creation the puff and softness in Bakery products
Dosage : 0.8 to 2 % of batter weight (Depends on the effect factors)
Procedure : : We recommend you to mix Emulsifier with sugar and oil, or sugar and egg in creaming step.
